Ingredients

  • 3 cans whole kernal corn
  • 2 cloves garlic, minced
  • 2 teaspoons garlic powder
  • 1 teaspoon brown sugar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/2 cup diced mixed bell peppers
  • 3 tablespoons mayonnaise (I like Duke's)
  • 3 teaspoons soy sauce (low sodium)
  • 1 teaspoon Tajin spice
  • 1 tablespoon honey mustard
  • 1/4 cup diced pineapple with juice

How To Make caribbean corn

  • Step 1
    Mix all ingredients except for the pineapple and juice in a medium pot.
  • Step 2
    Bring to a simmer over medium heat.
  • Step 3
    Slowly stir in the pineapple and juice. Return to a simmer and cook for 5 minutes.
