Ingredients
- 3 cans whole kernal corn
- 2 cloves garlic, minced
- 2 teaspoons garlic powder
- 1 teaspoon brown sugar
- 1 teaspoon ground cumin
- 1/2 teaspoon ground ginger
- 1/2 cup diced mixed bell peppers
- 3 tablespoons mayonnaise (I like Duke's)
- 3 teaspoons soy sauce (low sodium)
- 1 teaspoon Tajin spice
- 1 tablespoon honey mustard
- 1/4 cup diced pineapple with juice

Step 1Mix all ingredients except for the pineapple and juice in a medium pot.

Step 2Bring to a simmer over medium heat.

Step 3Slowly stir in the pineapple and juice. Return to a simmer and cook for 5 minutes.
