Ingredients For caribbean corn

  • 3 can
    whole kernal corn
  • 2 clove
    garlic, minced
  • 2 tsp
    garlic powder
  • 1 tsp
    brown sugar
  • 1 tsp
    ground cumin
  • 1/2 tsp
    ground ginger
  • 1/2 c
    diced mixed bell peppers
  • 3 Tbsp
    mayonnaise (I like Duke's)
  • 3 tsp
    soy sauce (low sodium)
  • 1 tsp
    Tajin spice
  • 1 Tbsp
    honey mustard
  • 1/4 c
    diced pineapple with juice

How To Make caribbean corn

  • 1
    Mix all ingredients except for the pineapple and juice in a medium pot.

    Bring to a simmer over medium heat.

    Slowly stir in the pineapple and juice. Return to a simmer and cook for 5 minutes.
