If you want you kids to eat their vegetables, this is one way to do it. My kids ask me to make this side dish.

Ingredients

  • 1 medium fresh, butternut squash, peeled and cubed.
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter
  • 1 cup brown sugar, tightly packed
  • 1 teaspoon ground cinnamon

How To Make caramilized butternut squash

  • Step 1
    Place cubed butternut in a heavy-bottomed pot, add salt and about 2 cups of water,( butternut contains a lot of water), cover and cook until tender enough to mash. Drain and mash.
  • Step 2
    In a separate skillet on medium-high heat, add butter and melt. Add the brown sugar and cook until completely dissolved, add cinnamon. Add caramel mixture to mash butternut squash and stir until thoroughly mixed.
