My family loves corn and we're always looking for another way to prepare it. This is a nice dish with a little bit of a bite.

fresh corn kernels (3 medium ears) or 1 10-oz package frozen, thawed and drained
2 Tbsp
olive oil

red bell peppers, chopped
1/2 c
chopped onion

garlic clove, chopped
1/4 c
chopped fresh cilantro
1/2 tsp
chili powder

How to Make Caramelized Corn with Onions and Red Bell Peppers

Step-by-Step

  • 1Heat large nonstick skillet over medium-high heat. Add corn; stir until beginning to dry and brown, about 8 minutes. Transfer to small bowl.
  • 2Add oil to skillet. Heat over medium-high heat. Add bell peppers, onion, and garlic. Sauté until peppers are tender, about 8 minutes.
  • 3Mix in cilantro and chili powder, then corn. Stir until heated through, about 2 minutes. Season with salt and pepper.
