Someone on this site asked me how to can peppers. Well here you go. Hope it helps.

10 c
jalapeno peppers -- sliced
2 clove
garlic -- peeled and cloves separated from bulb
2 c
white vinegar
3 c
3 tsp
pickling salt

How to Make Canning Peppers


  • 1Place washed peppers and garlic into hot sterile jars leaving ¼” headspace.
  • 2Boil water, vinegar, & salt together.
  • 3Pour hot liquid over peppers leaving ¼” headspace
  • 4Put the lids on very tightly.
  • 5Process jars in boiling water in a large stock pot so the lids will seal. (10 minutes for pint jars and 15 minutes for quart jars at a steady boil).
  • 6Let these peppers set for 2 to 3 weeks before opening.
