okra and tomatoes

This is a recipe that my sister-in-law made for us during our visit with them in Kansas. I'm not sure where she found the recipe.

Ingredients

  • 2 tablespoons olive oil
  • 2-3 cloves minced garlic
  • 1 cup chopped onion
  • 1 cup bell pepper, cut in bite size pieces
  • 2 cups okra, cut (fresh or frozen)
  • 14 1/2 ounces diced tomatoes
  • 8 ounces tomato sauce
  • 2 teaspoons sugar
  • 1 cup water
  • 1 teaspoon louisiana cajun seasoning

How To Make okra and tomatoes

  • Step 1
    In a large skillet; Saute garlic in the olive oil for 1-2 minutes.
  • Step 2
    Add onion and bell pepper to the skillet. Saute 3-4 minutes.
  • Step 3
    Add okra to the skillet mixture. Saute 4-5 minutes
  • Step 4
    Add the tomatoes, tomato sauce, water, sugar and cajun seasoning. Simmer until vegetables are crisp tender.
  • Step 5
    Her original recipe called for 2 cups of tomato juice. I don't normally keep that on hand so I substituted tomato sauce, sugar and a little water. This is really good warmed up the next day.
