okra and tomatoes
This is a recipe that my sister-in-law made for us during our visit with them in Kansas. I'm not sure where she found the recipe.

Ingredients
- 2 tablespoons olive oil
- 2-3 cloves minced garlic
- 1 cup chopped onion
- 1 cup bell pepper, cut in bite size pieces
- 2 cups okra, cut (fresh or frozen)
- 14 1/2 ounces diced tomatoes
- 8 ounces tomato sauce
- 2 teaspoons sugar
- 1 cup water
- 1 teaspoon louisiana cajun seasoning
How To Make okra and tomatoes

Step 1In a large skillet; Saute garlic in the olive oil for 1-2 minutes.

Step 2Add onion and bell pepper to the skillet. Saute 3-4 minutes.

Step 3Add okra to the skillet mixture. Saute 4-5 minutes

Step 4Add the tomatoes, tomato sauce, water, sugar and cajun seasoning. Simmer until vegetables are crisp tender.

Step 5Her original recipe called for 2 cups of tomato juice. I don't normally keep that on hand so I substituted tomato sauce, sugar and a little water. This is really good warmed up the next day.
