Sherry Wilkins

This is a recipe that my sister-in-law made for us during our visit with them in Kansas. I'm not sure where she found the recipe.

  • 2 Tbsp
    olive oil
  • 2-3 clove
    minced garlic
  • 1 c
    chopped onion

bell pepper, cut in bite size pieces

    okra, cut (fresh or frozen)
  • 14 1/2 oz
    diced tomatoes
  • 8 oz
    tomato sauce
  • 2 tsp
  • 1 c
  • 1 tsp
    louisiana cajun seasoning

How to Make Okra and Tomatoes

  1. In a large skillet; Saute garlic in the olive oil for 1-2 minutes.
  2. Add onion and bell pepper to the skillet. Saute 3-4 minutes.
  3. Add okra to the skillet mixture. Saute 4-5 minutes
  4. Add the tomatoes, tomato sauce, water, sugar and cajun seasoning.
Simmer until vegetables are crisp tender.
  5. Her original recipe called for 2 cups of tomato juice. I don't normally keep that on hand so I substituted tomato sauce, sugar and a little water.
This is really good warmed up the next day.
