Ingredients

  • 3 c
    cooked rice
  • 8 oz
    sour cream
  • 1 tsp
    cajun poultry seasoning
  • 16 oz
    red kidney beans
  • 1 can(s)
    chile peppers
  • 1/2 c
    smoke sausage, diced
  • 1/2 c
    monterey jack cheese, shredded

How to Make Cajun Beans

Step-by-Step

  1. Place cooked rice in a lightly greased 2-quart baking dish.
  2. Combine the sour cream, poultry seasoning, and chile peppers. Spread over rice.
  3. Combine red beans and smoke sausage. Spoon over sour cream mixture. Bake at 350 degrees about 30 minutes or until bubbly. Sprinkle with cheese and bake and additional five minutes.
