butternut squash casserole

My favorite aunt used to make this for family potluck dinners. We would go to Grandma's almost every Sunday night and each family brought a couple of dishes. What great food!

Ingredients

  • 3 cups cooked and mashed butternut squash
  • 2 tablespoons butter
  • 1 tablespoon brown sugar
  • 1/4 teaspoon salt
  • 6 cups peeled, chopped apples
  • 1/4 cup sugar
  • 1 1/2 cups crushed corn flakes
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup brown sugar, firmly packed
  • 2 tablespoons butter

How To Make butternut squash casserole

  • Step 1
    Preheat oven to 350 degrees. Combine first four ingredients, stirring well, and set aside.
  • Step 2
    Melt 1 T of the butter in a large skillet; add apples and sugar. Cover and simmer 8-10 minutes or until tender. Drain off excess liquid. Stir apples into squash mixture. Spoon into lightly greased 2 quart casserole dish.
  • Step 3
    Combing remaining ingredients, stirring well. Sprinkle over squash mixture. Bake at 350F for 20 minutes.
