I like this one because it is not sweet. I love sweet don't get me wrong, but I don't want sweet for my sides all the time.

Ingredients
- 1 - peeled and diced butter nut squash
- 2 tablespoons mayo
- 2 tablespoons butter
- 1/2 cup onion, diced
- 3 - chopped sage leaves or 1/2 tsp dried sage
- 1 teaspoon brown sugar
- - crushed saltines
- - parmesan cheese grated
- - melted butter
- - salt and pepper
How To Make butternut squash casserole

Step 1bake or boil squash. I think baking adds more flavor use butter or olive oil to saute onions till very soft. Use a potato masher to mash up the squash and onions.

Step 2Add mayo, butter, sage, brown sugar and salt/pepper pour into a sprayed or buttered casserole dish.

Step 3Top with the saltine crackers which have been tossed in melted butter and the grated parm. Bake at 350 for about 45 min till browned on top and puffy.
