Butternut Squash Casserole

1peeled and diced butter nut squash

2 Tbspmayo

2 Tbspbutter

1/2 conion, diced

3chopped sage leaves or 1/2 tsp dried sage

1 tspbrown sugar

·crushed saltines
-
·parmesan cheese grated

·melted butter

·salt and pepper
How to Make Butternut Squash Casserole
- bake or boil squash. I think baking adds more flavor
use butter or olive oil to saute onions till very soft.
Use a potato masher to mash up the squash and onions. - Add mayo, butter, sage, brown sugar and salt/pepper
pour into a sprayed or buttered casserole dish. - Top with the saltine crackers which have been tossed in melted butter and the grated parm.
Bake at 350 for about 45 min till browned on top and puffy.
