Butternut Squash Bake

Ingredients

1/4 cmelted butter or margarine

1/2 csugar

2eggs or egg subsitute

1 can(s)(5 oz.) evaporated milk

1 tsppure vanilla extract

2 cmashed, cooked butternut squash or 2 10 oz. packages of cooked frozen winter squash (thawed and drained.)

3/4 ccrisp rice cereal

1/4 cpacked brown sugar

1 Tbspbutter or margarine, melted
How to Make Butternut Squash Bake
- Mix together butter and sugar, beat in eggs, milk and vanilla. Stir in squash (mixture will be thin).
- Pour into a greased 11 x 7 in. baking pan. Bake, uncovered at 350 degrees for 45 minutes or until almost set.
- Combine rice cereal, brown sugar and melted butter, sprinkle over casserole. Return to oven for 10 minutes or until bubbly.
