Ingredients

  • 1/4 cup melted butter or margarine
  • 1/2 cup sugar
  • 2 - eggs or egg subsitute
  • 1 can (5 oz.) evaporated milk
  • 1 teaspoon pure vanilla extract
  • 2 cups mashed, cooked butternut squash or 2 10 oz. packages of cooked frozen winter squash (thawed and drained.)
  • 3/4 cup crisp rice cereal
  • 1/4 cup packed brown sugar
  • 1 tablespoon butter or margarine, melted

How To Make butternut squash bake

  • Step 1
    Mix together butter and sugar, beat in eggs, milk and vanilla. Stir in squash (mixture will be thin).
  • Step 2
    Pour into a greased 11 x 7 in. baking pan. Bake, uncovered at 350 degrees for 45 minutes or until almost set.
  • Step 3
    Combine rice cereal, brown sugar and melted butter, sprinkle over casserole. Return to oven for 10 minutes or until bubbly.
