butternut squash bake

Gosh I hate to admit this but I was 30 something the first time I tasted a butternut squash. I have tried it a variety of ways and I like them all, the grandchildren, well not so much. But this and the Mango butternut squash are two ways they love it. I live with my daughter and her family and the one thin I can still do is cook so I try lots of things which is sooo fun.

Ingredients

  • 1 large butternut squash about 3 pounds
  • 1/4 cup melted butter
  • 1/2 cup orange juice
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon ginger
  • 1/8 teaspoon cloves
  • - orange marmalade

How To Make butternut squash bake

  • Step 1
    Put butternut squash in the microwave and cook on high, until soft, 2 to 3 minutes. Cut in half, scoop out seeds and cube. Cook squash in boiling water until tender, about 15 minutes. Drain and let dry a bit.
  • Step 2
    Preheat oven to 350. Take squash and mash with potato masher, then add the remaining ingredient except marmalade one at a time and mix well. Spread this into a buttered casserole, then spread a thin layer of marmalade on top. Bake for 30 minutes.
  • Step 3
    Note: The kids aren't overly thrilled with marmalade. I bought a "sweet marmalade" and they liked it a better. You can use whichever brown sugar you like, I almost always reach for the dark brown sugar cause I like the more intense flavor.
