How to Make Buttercup Squash Casserole


  • 1Heat oven to 350 degrees.
  • 2Cut squash into quarters; remove seeds.
  • 3Place, cut side down, in ungreased shallow baking pan.
  • 4Bake at 350 degrees for 45 to 50 minutes or until tender.
  • 5Cool slightly.
  • 6Grease 1-quart casserole.
  • 7Scoop squash pulp from skin; place in medium bowl.
  • 8Discard skin.
  • 9Add brown sugar, salt, cinnamon, 1/4 teaspoon nutmeg, and butter to squash.
  • 10Mix with potato masher or fork until well blended.
  • 11Spoon into greased casserole.
  • 12Sprinkle with chives and 1/8 teaspoon nutmeg.
  • 13Bake at 350 degrees for 20 to 25 minutes or until thoroughly heated.
