Ingredients
- 1 - buttercup squash
- 2 tablespoons brown sugar
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 tablespoons butter
- 1 tablespoon chives, fresh/chopped
- 5/8 teaspoon nutmeg
How To Make buttercup squash casserole

Step 1Heat oven to 350 degrees.

Step 2Cut squash into quarters; remove seeds.

Step 3Place, cut side down, in ungreased shallow baking pan.

Step 4Bake at 350 degrees for 45 to 50 minutes or until tender.

Step 5Cool slightly.

Step 6Grease 1-quart casserole.

Step 7Scoop squash pulp from skin; place in medium bowl.

Step 8Discard skin.

Step 9Add brown sugar, salt, cinnamon, 1/4 teaspoon nutmeg, and butter to squash.

Step 10Mix with potato masher or fork until well blended.

Step 11Spoon into greased casserole.

Step 12Sprinkle with chives and 1/8 teaspoon nutmeg.

Step 13Bake at 350 degrees for 20 to 25 minutes or until thoroughly heated.
