Ingredients

  • 1 - buttercup squash
  • 2 tablespoons brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons butter
  • 1 tablespoon chives, fresh/chopped
  • 5/8 teaspoon nutmeg

How To Make buttercup squash casserole

  • Step 1
    Heat oven to 350 degrees.
  • Step 2
    Cut squash into quarters; remove seeds.
  • Step 3
    Place, cut side down, in ungreased shallow baking pan.
  • Step 4
    Bake at 350 degrees for 45 to 50 minutes or until tender.
  • Step 5
    Cool slightly.
  • Step 6
    Grease 1-quart casserole.
  • Step 7
    Scoop squash pulp from skin; place in medium bowl.
  • Step 8
    Discard skin.
  • Step 9
    Add brown sugar, salt, cinnamon, 1/4 teaspoon nutmeg, and butter to squash.
  • Step 10
    Mix with potato masher or fork until well blended.
  • Step 11
    Spoon into greased casserole.
  • Step 12
    Sprinkle with chives and 1/8 teaspoon nutmeg.
  • Step 13
    Bake at 350 degrees for 20 to 25 minutes or until thoroughly heated.
