brown butter butternut squash
I have fresh Butternuts from my garden, I get bored just baking them, or pureeing, so thought I would try them sauteed..they were delicious..

Ingredients
- 2 tablespoons butter
- 1/2 - 3/4 cups chicken broth
- 1 medium butternut squash
- 2-3 tablespoons dark brown sugar, had light so used it
- - salt and pepper to taste
- onions - & garlic - optional
How To Make brown butter butternut squash

Step 1Peel and cube squash, about 3/4 in bite size pieces. Brown the butter in a large skillet, med heat, about 5 min.Be careful not to burn.

Step 2Add the squash, and cook about 16 min, until golden brown, add the chicken stock and brown sugar, can add more or less, we like them sweet, cook another 6 minutes, until liquid is absorbed. ... Salt and pepper to taste.

Step 3The next time I will add some garlic to this, and maybe some fine diced onion, but was good as is.
