brown butter butternut squash

I have fresh Butternuts from my garden, I get bored just baking them, or pureeing, so thought I would try them sauteed..they were delicious..

Ingredients

  • 2 tablespoons butter
  • 1/2 - 3/4 cups chicken broth
  • 1 medium butternut squash
  • 2-3 tablespoons dark brown sugar, had light so used it
  • - salt and pepper to taste
  • onions - & garlic - optional

How To Make brown butter butternut squash

  • Step 1
    Peel and cube squash, about 3/4 in bite size pieces. Brown the butter in a large skillet, med heat, about 5 min.Be careful not to burn.
  • Step 2
    Add the squash, and cook about 16 min, until golden brown, add the chicken stock and brown sugar, can add more or less, we like them sweet, cook another 6 minutes, until liquid is absorbed. ... Salt and pepper to taste.
  • Step 3
    The next time I will add some garlic to this, and maybe some fine diced onion, but was good as is.
