I was tired of serving the typical broccoli and cheese side dish. Having a creative moment gave me this casserole/side dish. Add chicken or ham and it's a casserole. Using the regular ingredients makes it a fantastic side dish for any dinner. My kids love it and we have it often.

Ingredients

bag frozen broccoli, thawed, chopped
1
bag frozen cauliflower thawed, chopped (optional)

eggs beaten
1 c
mayo
2 c
sharp shredded cheddar cheese
2 can(s)
cream of chicken soup
1 c
chopped onion
3 c
ham or chicken
2 1/2 c
italian, garlic or ceasar croutons

How to Make BROCCOLI PUFF CASSEROLE

Step-by-Step

  • 1In large bowl whisk eggs, soup, mayo. Stir to blend. Add onion, broccoli, cauliflower, cheese, meat and croutons. Mix everything together and pour in sprayed lasagna pan.
  • 2Bake in preheated oven 350 degrees for 50-55 minutes. Bake uncovered.
