broccoli puff casserole

I was tired of serving the typical broccoli and cheese side dish. Having a creative moment gave me this casserole/side dish. Add chicken or ham and it's a casserole. Using the regular ingredients makes it a fantastic side dish for any dinner. My kids love it and we have it often.

Ingredients

  • 1 - bag frozen broccoli, thawed, chopped
  • 1 - bag frozen cauliflower thawed, chopped (optional)
  • 2 - eggs beaten
  • 1 cup mayo
  • 2 cups sharp shredded cheddar cheese
  • 2 cans cream of chicken soup
  • 1 cup chopped onion
  • 3 cups ham or chicken
  • 2 1/2 cups italian, garlic or ceasar croutons

How To Make broccoli puff casserole

  • Step 1
    In large bowl whisk eggs, soup, mayo. Stir to blend. Add onion, broccoli, cauliflower, cheese, meat and croutons. Mix everything together and pour in sprayed lasagna pan.
  • Step 2
    Bake in preheated oven 350 degrees for 50-55 minutes. Bake uncovered.
