broccoli casserole

I usually have to double this recipe. It's been a family favorite for years and a must for family reunions.

Ingredients

  • 1 1/4 pounds broccoli, chopped
  • 1 can cream of broccoli soup
  • 1 cup mayonnaise
  • 2 - eggs, slightly beaten
  • 1 cup sharp cheddar cheese, grated (reserve 2 t)
  • 4 teaspoons onion, chopped
  • 1 teaspoon butter
  • 1/2 cup bread crumbs

How To Make broccoli casserole

  • Step 1
    Pre-heat oven to 350 degrees. Cook broccoli and drain well.
  • Step 2
    Combine soup,mayonaisse,eggs, sharp cheese, and onion. Fold in broccoli. Place mixture in 2 1/2 quart greased dish.
  • Step 3
    In a pan, melt the butter on low heat. Stir in bread crumbs until coated. Continue to stir bread crumbs over low heat for about a minute. Remove from heat and stir in two tablespoons of the sharp cheese. Top casserole with buttered bread crumb and cheese mixture.
  • Step 4
    Bake for 30 minutes or until bubbly.
