Ingredients

  • 1 pound
    fresh broccoli
  • 2 cups
    fresh onions or leeks, chopped
  • 1 cup
    sharp or medium cheddar cheese
  • 4 tbsp
    butter
  • 2 tbsp
    flour
  • 1/4 tsp
    salt, dash of pepper
  • 1 cup
    milk
  • 4 oz
    cream cheese
  • 2 tbsp
    butter
  • 1 cup
    fresh breadcrumbs
  • 2tbsp
    parmesan cheese

How to Make Broccoli and Onion Casserole

Step-by-Step

  1. Cut broccoli into bite size pieces and cook in boiling water for about 3 minutes, drain
    Blanch onions,drain.
  2. Sauce... melt butter over medium heat, add flour, salt,pepper and milk and whisk until smooth.
    Blend in cream cheese until melted and smooth.
  3. Place broccoli into a 2 quart casserole dish. Place blanched onions on top of broccoli layer. Pour sauce over vegetables, spreading evenly.
    Sprinkle cheddar cheese over sauce.
    Melt about 2 tbsp of butter in small bowl and add about a cup of fresh breadcrumbs and 2 tbs parmesan cheese. Mix well and sprinkle over sauce.
    Bake at 350 F for about 35 minutes or until topping is brown and crispy.
