broad beans with bacon

This is a sturdy Westphalian recipe. If no fresh ones are available, you can use frozen or canned broad beans (fava beans). Use smoked bacon bits. If you can't get summer savoury, use thyme instead. I'm not totally sure about the cook time because I usually cook the potatoes one day in advance and use frozen beans which only require a couple of minutes to boil. And make sure you don't use fat-free bacon!! This recipe needs bacon fat for flavour.

Ingredients

  • 2 pounds broad beans
  • 2 pounds potatoes
  • 2 onions
  • 3 ounces bacon bits, smoked
  • 1 cup water
  • 2 tablespoons flour
  • to taste salt and pepper
  • to taste summer savory

How To Make broad beans with bacon

  • Step 1
    If using fresh broad beans, peel them and then boil in salted water until done.
  • Step 2
    Boil and then cube potatoes
  • Step 3
    Chop onions and fry with the bacon bits until lightly brown; dust with the flour and then add some water to make a slurry.
  • Step 4
    Add the boiled beans and potato cubes, season with salt, pepper and summer savoury to taste and serve with sausages or meatballs
