bridgitte's crab & spinach au gratin

I made this delicious recipe over the Thanksgiving Holiday. It was a huge success! My beautiful niece Bridgitte, loved it. It was only fitting that this delite should bare her name. I hope that you all will love this as much as we all did. Cooking with Passion, sw:)

Ingredients

  • 1 pint lump crab meat
  • 1 tablespoon all purpose flour
  • 10 oz boxes spinach, frozen.. thawed & drained
  • 1 cup half and half
  • 1 cup sharp cheddar, shredded
  • 1 cup italian blend cheese, shredded
  • 5 ounces cream cheese
  • 1 stick unsalted butter
  • 2 - green onion, stalks chopped
  • 1 tablespoon granulated garlic
  • 1 teaspoon red chili pepper
  • 1 teaspoon white pepper, ground
  • - zest of one lemon

How To Make bridgitte's crab & spinach au gratin

  • Step 1
    preheat your oven to 350 degrees. melt 1/2 of butter in a large skillet. add crab meat to skillet and gingerly saute for 2 to 3 minutes. remove the crab meat. leave all the liquid in the skillet. saute the green onions, spinach and zest for a 2-3 minutes. remove mixture from skillet. melt the remaining butter. stir in flour, salt & pepper. once well blended, add half & half, cream cheese, half of the shredded cheese and the remaining ingredients. make sure you melt the cheese.
  • Step 2
    add and gently fold the crabmeat and spinach mixture back to skillet with the cream and cheese mixture. cook on low heat until well blended
  • Step 3
    pour all ingredients into a lightly greased casserole dish. top with the remaining shredded cheese. bake at 350 degrees for 20-25 minutes until golden brown.
  • Step 4
    serve with a salad, crackers, toast points or your favorite chips. sw?
