Ingredients
- 8 small zucchini
- 1/2 cup flour
- 1/4 teaspoon salt
- - pepper to taste
- 2 large eggs, beated
- 2/3 cup bread crumbs
- 1/4 cup parmesan cheese
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried oregano
- 1/4 cup olive oil
How To Make breaded squash fans

Step 1Slice squash in 1/4 inch slices leaving connected at the stem end. Parboil 3 mins. Drain well and gently spread fan open.

Step 2Place flour, salt and pepper in one bowl, beaten eggs in a separate bowl and bread crumbs, cheese and herbs in another bowl.

Step 3Dip fans in flour, then egg and then crumb mixture. Brown in olive oil and serve hot.
