How to Make Breaded Squash Fans
1Slice squash in 1/4 inch slices leaving connected at the stem end. Parboil 3 mins. Drain well and gently spread fan open.
2Place flour, salt and pepper in one bowl, beaten eggs in a separate bowl and bread crumbs, cheese and herbs in another bowl.
3Dip fans in flour, then egg and then crumb mixture. Brown in olive oil and serve hot.
