Ingredients

  • 8 small
    zucchini
  • 1/2 c
    flour
  • 1/4 tsp
    salt
  • ·
    pepper to taste
  • 2 large
    eggs, beated
  • 2/3 c
    bread crumbs
  • 1/4 c
    parmesan cheese
  • 1/2 tsp
    dried basil
  • 1/4 tsp
    dried thyme
  • 1/4 tsp
    dried oregano
  • 1/4 c
    olive oil

How to Make Breaded Squash Fans

Step-by-Step

  1. Slice squash in 1/4 inch slices leaving connected at the stem end. Parboil 3 mins. Drain well and gently spread fan open.
  2. Place flour, salt and pepper in one bowl, beaten eggs in a separate bowl and bread crumbs, cheese and herbs in another bowl.
  3. Dip fans in flour, then egg and then crumb mixture. Brown in olive oil and serve hot.
