This is a series of 'Eggplant' recipes I will be posting. They come from a vintage cookbook so you will notice the extended use of butter and/or fat. I exchange the fats for veggie oil, usually Canola oil. Please use any light oil of your choice.

Ingredients
- 2 pounds eggplant
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 - egg, beaten
- 1 cup cracker crumbs
- 3 tablespoons butter
How To Make breaded eggplant

Step 1Pare eggplant and cut into 1/4 inch slices. Sprinkle with salt and pepper. Dip into beaten egg and then into cracker crumbs.

Step 2Place in greased baking pan; dot with butter and bake in hot oven (400 degrees F.) 40 minutes or until browned.
