Ingredients
- 1 lb - dried blackeyed peas, rinsed and sorted
- 1/2 lb - bacon, cooked and crumbled
- 1 1/2 cups chopped onion
- 1 clove chopped garlic
- 2 TBSP - butter
- 1/2 teaspoon dried thyme
- - salt to taste
- - additional crumbled bacon
How To Make blackeyed peas with bacon

Step 1Boil peas, bacon in enough water to cover in a large kettle. Boil for 2 minutes,cover, remove from heat and let stand for 1 hour. Do not drain.

Step 2In a skillet saute onion and garlic in butter until tender. Add to pea mixture along with thyme and salt.

Step 3Return to the heat, cover, and simmer for 40 minutes or until peas are soft. Top with addition crumbled bacon if desired
