Betty and my mom were best friends from childhood up into their seventies. Mom passed away a couple of years ago, but Betty still keeps in touch. She gave me this scrumptious recipe about a year ago.
I was never really a fan of yams, but I think this recipe has converted me!

Ingredients

4 medium
(or larger) yams, cooked and mashed
1/2 tsp
salt
1 tsp
cinnamon
1 tsp
nutmeg
1/4 tsp
ground ginger
grated rind (zest) of one orange

8 ounce can crushed pineapple, drained

beaten eggs
1 Tbsp
butter, melted
1/4 c
brown sugar, mixed with 1/2 cup sour cream
1/4 c
slivered almonds

miniature marshmallows

How to Make Betty Ann's Favorite Yam Dish

Step-by-Step

  • 1Pre-heat oven to 350º.
  • 2Mix well all ingredients except brown sugar mixture, almonds and marshmallows. Spoon into greased baking casserole.
  • 3Spread brown sugar and sour cream mixture over the top of casserole. Sprinkle slivered almonds over top, then scatter marshmallows over all.
  • 4Bake at 350º for 40 to 60 minutes, or until puffy and lightly browned.
