Betty Ann's Favorite Yam Dish
I was never really a fan of yams, but I think this recipe has converted me!

4 medium(or larger) yams, cooked and mashed
1/4 tspground ginger
·grated rind (zest) of one orange
18 ounce can crushed pineapple, drained
1 Tbspbutter, melted
1/4 cbrown sugar, mixed with 1/2 cup sour cream
1/4 cslivered almonds
How to Make Betty Ann's Favorite Yam Dish
- Pre-heat oven to 350º.
- Mix well all ingredients except brown sugar mixture, almonds and marshmallows. Spoon into greased baking casserole.
- Spread brown sugar and sour cream mixture over the top of casserole. Sprinkle slivered almonds over top, then scatter marshmallows over all.
- Bake at 350º for 40 to 60 minutes, or until puffy and lightly browned.
