betty ann's favorite yam dish
Betty and my mom were best friends from childhood up into their seventies. Mom passed away a couple of years ago, but Betty still keeps in touch. She gave me this scrumptious recipe about a year ago. I was never really a fan of yams, but I think this recipe has converted me!

Ingredients
- 4 medium (or larger) yams, cooked and mashed
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/4 teaspoon ground ginger
- - grated rind (zest) of one orange
- 1 - 8 ounce can crushed pineapple, drained
- 2 - beaten eggs
- 1 tablespoon butter, melted
- 1/4 cup brown sugar, mixed with 1/2 cup sour cream
- 1/4 cup slivered almonds
- 30 - miniature marshmallows

Step 1Pre-heat oven to 350º.

Step 2Mix well all ingredients except brown sugar mixture, almonds and marshmallows. Spoon into greased baking casserole.

Step 3Spread brown sugar and sour cream mixture over the top of casserole. Sprinkle slivered almonds over top, then scatter marshmallows over all.

Step 4Bake at 350º for 40 to 60 minutes, or until puffy and lightly browned.
