Betty and my mom were best friends from childhood up into their seventies. Mom passed away a couple of years ago, but Betty still keeps in touch. She gave me this scrumptious recipe about a year ago. I was never really a fan of yams, but I think this recipe has converted me!

Ingredients

  • 4 medium (or larger) yams, cooked and mashed
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • - grated rind (zest) of one orange
  • 1 - 8 ounce can crushed pineapple, drained
  • 2 - beaten eggs
  • 1 tablespoon butter, melted
  • 1/4 cup brown sugar, mixed with 1/2 cup sour cream
  • 1/4 cup slivered almonds
  • 30 - miniature marshmallows

How To Make betty ann's favorite yam dish

  • Step 1
    Pre-heat oven to 350º.
  • Step 2
    Mix well all ingredients except brown sugar mixture, almonds and marshmallows. Spoon into greased baking casserole.
  • Step 3
    Spread brown sugar and sour cream mixture over the top of casserole. Sprinkle slivered almonds over top, then scatter marshmallows over all.
  • Step 4
    Bake at 350º for 40 to 60 minutes, or until puffy and lightly browned.
