beet pickles
Depending on where you grew up, you may have called these pickled beets! Either way these are a family must have every fall. We love them with casseroles, sandwiches, or just by themselves.

Ingredients
- 3 quarts beets, cooked until tender
- 2 cups sugar
- 2 teaspoons cinnamon
- 1 tablespoon whole allspice
- 1 1/2 teaspoons salt
- 3 1/2 cups vinegar
- 1 1/2 cups water
How To Make beet pickles

Step 1To cook beets, cut tops off, rinse excess dirt off and place in large kettle. Bring to a boil, decrease heat and continue to cook until tender. After beets are tender and cooled so that you can handle them, slip off the skins. Cut off any remaining top or roots.

Step 2Place beets in large kettle.

Step 3Mix rest of ingredients well and pour over beets in large kettle to cover. Bring to a boil over medium heat and decrease heat to simmer. Simmer for 15 minutes.

Step 4Seal in clean, hot jars.
