Beet Pickles

Depending on where you grew up, you may have called these pickled beets! Either way these are a family must have every fall.

We love them with casseroles, sandwiches, or just by themselves.

How to Make Beet Pickles

  1. To cook beets, cut tops off, rinse excess dirt off and place in large kettle. Bring to a boil, decrease heat and continue to cook until tender.

After beets are tender and cooled so that you can handle them, slip off the skins. Cut off any remaining top or roots.
  2. Place beets in large kettle.
  3. Mix rest of ingredients well and pour over beets in large kettle to cover. Bring to a boil over medium heat and decrease heat to simmer. Simmer for 15 minutes.
  4. Seal in clean, hot jars.
