4greens from whole beets
2 Tbspmelted butter or fatback
1 smallclove garlic, crushed
2strips bacon, fried and crumbled
How to Make Beet Greens, Mark
- Cut the greens from the beets. Thouroughly wash the greens, then chop coarsely. Place them in a medium covered pot and steam them, using no additional water and steam them for about 5 minutes.
Put butter or fatback in a heavy skillet, and bring to low heat, and sautee the garlic.
Stir in the greens and cooks 1-2 more minutes. Add salt and pepper to taste.
