I found this in my Mom's handwriting, and it was "delicious" according to my Mom. My Aunt Virginia lived in a suburb of Phoenix, Az. from the time I was perhaps 5 yrs. old,and I lived in Ma., so I missed her a lot. She was my mom's only Sister,and Aunt V. loved to grow roses and she had fruit trees in her yard, and she enjoyed cooking also. Her grandchild called my Mom, "Aunt Sister", because she heard Virginia calling her "sister", and she heard her dad call her "aunt"! I love the names children create for people!

Ingredients

  • 1 cup sugar
  • 1 cup vinegar
  • 1/2 cup oil (wesson)
  • 1 can green beans, or 12 oz. blanched green beans
  • 1 can yellow string beans, or 12 oz. blanched wax beans
  • 1 can (12 oz.) kidney beans, canned
  • 1/2 large onion, sliced
  • 1/2 cup or more, sliced celery
  • 1 small can lima beans, or frozen lima beans/thawed

How To Make bean salad -aunt virginia's recipe

  • Step 1
    Measure and mix sugar, vinegar and oil into a saucepan, and bring to a boil. Boil for two minutes.
  • Step 2
    Drain cans of beans and rinse, and place in large bowl, add sliced onion and celery.
  • Step 3
    Add dressing to mixture and cover bowl, refrigerate three days.
