Ingredients

1 lb
fresh green beans, ends trimmed
1 large
red bell pepper, cut into long strips
1 large
sweet onion, such as vidalia, cut into thin strips
1/4 - 1/3 c
lighter flavored olive oil
3-4 Tbsp
good balsamic vinegar
1 or more tsp
garlic salt with parsley
1/2-1 tsp
fresh ground black pepper

How to Make Balsamic Roasted Green Beans

Step-by-Step

  • 1Preheat oven to 425 degrees. Wash and trim green beans, leaving them whole. Wash and slice red pepper and sweet onion. Lay vegetables in large casserole dish.
  • 2Pour olive oil over vegetables and gently toss. Drizzle balsamic over them and season with garlic salt and pepper. Toss until well covered with seasonings.
  • 3Bake at 425 for 35-40 minutes, stirring frequently for even roasting. If desired, drizzle extra balsamic vinegar over them at end of cooking time. May be served hot or at room temperature.
