1 lb
fresh green beans, ends trimmed
1 large
red bell pepper, cut into long strips
1 large
sweet onion, such as vidalia, cut into thin strips
1/4 - 1/3 c
lighter flavored olive oil
3-4 Tbsp
good balsamic vinegar
1 or more tsp
garlic salt with parsley
1/2-1 tsp
fresh ground black pepper

1Preheat oven to 425 degrees. Wash and trim green beans, leaving them whole. Wash and slice red pepper and sweet onion. Lay vegetables in large casserole dish.
2Pour olive oil over vegetables and gently toss. Drizzle balsamic over them and season with garlic salt and pepper. Toss until well covered with seasonings.
3Bake at 425 for 35-40 minutes, stirring frequently for even roasting. If desired, drizzle extra balsamic vinegar over them at end of cooking time. May be served hot or at room temperature.
