Ingredients

  • 1 pound fresh green beans, ends trimmed
  • 1 large red bell pepper, cut into long strips
  • 1 large sweet onion, such as vidalia, cut into thin strips
  • 1/4 - 1/3 cup lighter flavored olive oil
  • 3-4 tablespoons good balsamic vinegar
  • 1 or more teaspoon garlic salt with parsley
  • 1/2-1 teaspoon fresh ground black pepper

How To Make balsamic roasted green beans

  • Step 1
    Preheat oven to 425 degrees. Wash and trim green beans, leaving them whole. Wash and slice red pepper and sweet onion. Lay vegetables in large casserole dish.
  • Step 2
    Pour olive oil over vegetables and gently toss. Drizzle balsamic over them and season with garlic salt and pepper. Toss until well covered with seasonings.
  • Step 3
    Bake at 425 for 35-40 minutes, stirring frequently for even roasting. If desired, drizzle extra balsamic vinegar over them at end of cooking time. May be served hot or at room temperature.
