Ingredients
- 2 cups long grain rice, uncooked
- 1 small bell pepper; diced
- 1 small onion; diced
- 1 teaspoon garlic powder
- 1/2 teaspoon ground turmeric
- 1 tablespoon light olive oil
- 3 tablespoons butter, unsalted
- 1 can chicken or beef broth(14.5 oz.)
- 1 can water(fill broth can) plus 1/3 c.
- 1 cup carrots, julienned
- 1 cup broccoli, frozen
- - salt and pepper to taste
How To Make baked yellow rice & vegetables

Step 1Preheat oven to 350*

Step 2Add butter and oil to cold skillet then heat on medium heat. Add onion and bell pepper. Saute one minute. Add rice and turmeric; stir. Pour in broth and water, adding seasonings and other vegetables.

Step 3Bring to boil stirring once more. Pour ingredients into 13x9 casserole dish. Bake for 30 minutes or until liquid is absorbed.
