Ingredients
- 3 medium zucchini, quartered and sliced 1/2 inch chunks
- 1 medium onion, finely chopped
- 3 - garlic cloves, finely chopped
- - red, green and yellow bell peppers, seeded and sliced into small chunks
- 4 - ripe tomatoes, cut in small chunks (or 1 14oz can chopped tomatoes
- 2 tablespoons olive oil
- 1 cup water
- 2 tablespoons oregano
- - sea salt and black pepper to taste
How To Make baked vegetables in tomato sauce

Step 1Preheat oven to 400 degrees F. Combine zucchini, onion, peppers, and garlic on a baking tray. Pour in the olive oil and toss well.

Step 2Stir in chopped tomatoes, combine well and then pour in water. Add oregano and season with salt and freshly ground black pepper.

Step 3Bake for approximately 20 minutes. After 20 minutes, give the vegetables a good toss and bake an additional 20 minutes until they start to char at the edges.

Step 4Serve hot as part of a mezze spread or as a side to pasta or grilled meat.
