This was a pure accident. I had a party over the weekend, and made too many potatoes. The next day, while I was wondering what to do with all those extra potatoes, I came up with this idea. Next time, I will make extra and make this for the next football game.

Ingredients
- 2 - baking potatoes
- 1/2 cup chopped green onions
- 1/2 cup bacon bits
- 1/2 cup shredded cheese
- 1/2 cup sour cream
How To Make baked potato salad

Step 1bake the potatoes until fork tender in a 350 degree oven.

Step 2let them cool, best the next day. Peel the skin and dice the potatoes.

Step 3Add the rest of the ingredients. Salt and pepper to taste.
