This is a healthier version of Fried Green Tomatoes. I think you will find it is also good without the butter and frying them in it. These make a good side dish at a BBQ. This recipe was in a church cookbook dated 2007.

Ingredients
- 1 cup seasoned bread crumbs
- 1/4 cup olive oil, extra virgin
- 3 tablespoons water
- 3 cloves garlic, minced
- 4 tablespoons freshly grated parmesan cheese
- 3 large green tomatoes, sliced into 1/4 inch slices
- - sea salt and freshly ground black pepper as desired (depending on amount of seasoning in bread crumbs)
How To Make baked green tomatoes

Step 1Preheat oven to 350 degrees. Spray cookie sheet with non-stick spray. Combine bread crumbs, olive oil, water, garlic, and cheese in a small bowl. Place tomatoes on cookie sheet in a single layer. Top each slice of tomato with an equal portion of bread crumbs mixture. Sprinkle with a little sea salt and freshly ground black pepper if needed. Bake for 35-40 minutes or until topping is light brown.
