I discovered this recipe from a Mr. Food cookbook years ago. I have modified it to fit my families' taste. It's great for family gatherings and pot luck socials.

Ingredients For baked corn casserole

  • SINGLE RECIPE
  • 1 pkg
    jiffy corn muffin mix
  • 1 can
    15 3/4 ounces fiesta corn, drained
  • 1 can
    14 3/4 ounces cream style corn
  • 1 c
    sour cream
  • 1/2 c
    1 stick butter - softened
  • 1
    egg

How To Make baked corn casserole

    Preheat oven to 350 degrees. Spray a 2 quart casserole dish with non-stick cooking spray.

    In large bowl combine all ingredients and mix well.

    Pour ingredients into 2 quart casserole dish, cover and bake for 30 minutes. (I like to cut up a 1/2 stick of butter into chunks and place all over the top before baking. This process is optional).

    After 30 minutes, uncover and bake for additional 30 minutes or until golden brown.

    This recipe can be doubled to serve at larger gatherings or pot lucks if needed. It is a great crowd pleaser.
