This is not the baked corn casserole with cornbread mix or sour cream. It is, however, absolutely delicious. Sweet & comforting. This is one of my daughter's all-time favorite dishes, and I make it every Thanksgiving, Christmas, & many Sunday dinners.

Ingredients

  • 2 tablespoons butter
  • 1 1/2 tablespoons flour
  • 1 cup whole milk
  • 2 cups corn, drained (i use the whole 15 & 1/4 ounce can)
  • 2 tablespoons sugar
  • 2 - eggs, well beaten
  • - salt & pepper

How To Make baked corn

  • Step 1
    Melt butter over low heat. Add flour & stir well. Once this is blended & heated through, add milk. Bring to a quick boil.
  • Step 2
    Stir in corn (make sure it is VERY well drained!), sugar, salt & pepper to taste.
  • Step 3
    Heat this for about 2 minutes & then remove from heat. Add eggs & mix through.
  • Step 4
    Pour in greased baking dish & bake for 25 minutes @ 350 degrees.
