When I was first married, my mother-in-law served these. They became my favorite way to eat cauliflower. They are like potato chips...you never can eat just one!

Ingredients
- 1 - head of cauliflower, separated into florets
- 2 - eggs, beaten
- 1 cup bread crumbs, dry
- 2 tablespoons olive oil
How To Make baked cauliflower

Step 1Wash cauliflower, place in a saucepan, with about 2 inches of salted water, cover pot, bring to a boil, and cook for 10 minutes. Drain cauliflower, and let cool for a minute or two. Don't overcook cauliflower, or it will fall apart.

Step 2Beat eggs in a shallow bowl, and dip cauliflower pieces in egg, and then breadcrumb.

Step 3Place breaded pieces in a casserole dish sprayed with cooking spray, drizzle with the olive oil, and bake in a 350 degree oven for 30 minutes, turning pieces so they brown on all sides. Enjoy!
