My Mom taught me this recipe. She also told me to make sure to use small to medium sized squash, so they're not stringy.

Ingredients
- 1 medium butternut squash
- 1-2 tablespoon butter, room temperature
- 1-2 tablespoon cinnamon
- 1 pinch each of salt and pepper

How To Make baked butternut squash

Step 1Pre-heat oven to 350 F. Cut squash in half, scoop out seeds. Score squash in two directions diagonally, spread butter on it, add salt and pepper; cinnamon. Put in a 2 qt. pan with a little water in it. Cover with foil. Bake for about 45-60 mins. Keep checking it with a fork; when it slides off the fork, it's done.

Step 2When the squash has cooled, scoop out squash into seving size portions into quart size freezer baggies to put in the freezer; save some for that night's dinner. Enjoy!
