baked broccoli cheese patties

Quick to throw together and awesome in a veggy and cheesey way- a sneaky way to get the kids to eat their veggies and since they are baked and not fried (even tho they taste like it), they are healthy also!

Ingredients

  • 2 teaspoons canola oil
  • 2 cloves garlic, minced
  • 1/2 medium onion, chopped
  • 1 bag (12oz) frozen broccoli, thawed and squeezed to remove water
  • 3/4 cup panko bread crumbs
  • 1/2 cup sharp cheddar cheese
  • 1/3 cup parmesan cheese
  • 2 large eggs, beaten
  • 1/8 teaspoon salt
  • 1/16 teaspoon pepper
  • 1/4 teaspoon old bay seasoning
  • 1/4 teaspoon garlic powder

How To Make baked broccoli cheese patties

  • Step 1
    Line a cookie sheet with foil, lightly grease the foil.
  • Step 2
    Preheat oven to 400 degrees.
  • Step 3
    Heat oil in a small pan over medium heat. Add minced garlic, onions and dash salt and pepper. Saute' til onions and garlic are tender; set aside to cool.
  • Step 4
    Put broccoli into large bowl and add onion/garlic mix. Stir gently.
  • Step 5
    Add cheeses and egg and mix.
  • Step 6
    Add panko bread crumbs, garlic powder, Old Bay and salt and pepper. Mix again gently and then form into patties.
  • Step 7
    Place on prepared baking sheet and bake at 400 degrees on one side til brown, 15 mins. Turn over and bake for 15 additional minutes, browning the other side. Enjoy!
