baked broccoli casserole
I'm not a cottage cheese person. At all. So when I heard this recipe called for cottage cheese, I almost didn't try it. But the cottage cheese mixes in with the flavors and bakes into the casserole and actually does not taste like you would think. This is a really good tasting dish.

Ingredients
- 3-1/2 cups fresh broccoli florets and cut up stalks
- 1/4 cup chopped green onion
- 1/4 cup chopped pimento (optional)
- 3 - eggs
- 1 cup evaporated skim milk (canned)
- 3/4 cup low fat cottage cheese or ricotta cheese
- 4 tablespoons shredded parmesan cheese
- 4 tablespoons dry sherry or other dry white wine
- 1 teaspoon italian seasoning (or to taste)
- 3-4 - shakes garlic powder
- - salt and pepper to taste
How To Make baked broccoli casserole

Step 1Preheat oven to 350 degrees.

Step 2Steam broccoli on top of stove until crisp-tender.

Step 3Arrange broccoli, green onion, and pimento in a casserole that you've coated with vegetable spray.

Step 4In blender or food processor, combine eggs, milk, cottage cheese and Parmesan cheese, wine, garlic powder, salt and pepper. Pour the mixture over the broccoli in the casserole.

Step 5Bake 35-40 minutes, or until knife inserted near center comes out clean.
