I love squash of all kinds! Recently ventured into acorn squash and trying to find new ways to use them.

Ingredients

  • 3 - acorn squash
  • 2 cups applesauce
  • 1/3 cup brown sugar, firmly packed
  • 1/3 cup raisins
  • 1/4 cup pecans, chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons butter

How To Make baked acorn squash with applesauce filling

  • Step 1
    Cut the squash in half lengthwise. Remove the seeds and membranes. Place the squash, cut side up, in a 13 x 9 x 2 inch baking dish. Add boiling water to the dish to a depth of 1 inch.
  • Step 2
    Combine the applesauce and the next 4 ingredients; stir well. Spoon into the acorn squash shells. Dot with the butter.
  • Step 3
    Cover and bake at 350° for 25 minutes. Remove cover, and bake an additional 25 minutes or until the squash is tender.
