Fantastic summertime recipe for tomato lovers! Works for brunch, a dinner side or take it along to your next potluck!

Ingredients

  • 1 - pie crust shell
  • 6 ounces shredded mozzarella cheese
  • 4 - roma tomatoes, or regular tomatoes
  • 3/4 cup loose basil leaves
  • 4 cloves garlic
  • 1/2 cup mayonnaise
  • 1/4 cup grated parmesan cheese
  • - salt and pepper, to taste

How To Make awesome fresh tomato pie

  • Step 1
    Bake pie crust for 5-7 minutes at 450 degrees or until slightly dry.
  • Step 2
    Remove pie crust from oven and sprinkle 1/2 cup mozzarella cheese on bottom of pie crust. Reduce oven temp to 375.
  • Step 3
    Cut tomatoes into wedges or slices and arrange over cheese.
  • Step 4
    Combine basil and garlic with remaining mozzarella cheese, mayo and parmesan cheese. Sprinkle tomatoes with salt and pepper, then spread mayo mixture over tomatoes.
  • Step 5
    Bake pie for 25 minutes. Let stand 5 minutes before serving.
  • Step 6
    > Note: Can also sprinkle additional mozzarella over pie before baking if desired.
