avocado kale delight

I got this from the Gone Vegan site. It's a raw dish that will appeal to anyone who likes heart and cholesterol healthy dishes. I made mine a bit different then the recipe calls for. I didn't mush the tomatoes and avocados in with the kale. But it's up to you if you want to do it that way.

Ingredients

  • 1 bunch dinasaur kale, shredded
  • 1 cup tomatoes, chopped
  • 1 - avocado
  • 2 tablespoons great northern beans
  • 1 tablespoon lemon juice
  • - sea salt to taste
  • 1/2 teaspoon cayenne pepper

How To Make avocado kale delight

  • Step 1
    In a large mixing bowl, toss all the ingredients together.
  • Step 2
    Mush everything up with your hands and create a marinade/wilted affect on the kale. This is important as it softens the kale and it does taste much better. Serve Immediately or chill in the fridge.
