- 10 ounces white asparagus
- 8 ounces green asparagus
- olive oil
- salt and pepper
- 1 tablespoon water
- 1 large egg yolk
- 1 teaspoon lemon juice
- 1 teaspoon white truffle oil
- 1/2 cup olive oil
- 1/2 cup shredded Parmigiano-Reggiano
How To Make asparagus with truffle aioli and parmesan

Step 1Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. Trim the asparagus and lay them in a single layer.

Step 2Drizzle with olive oil and season with salt and pepper. Roast for 10 minutes, then turn and roast another 10 minutes.

Step 3Meanwhile, whisk the water, egg yolk, and lemon juice in a bowl.
