  • 10 ounces white asparagus
  • 8 ounces green asparagus
  • olive oil
  • salt and pepper
  • 1 tablespoon water
  • 1 large egg yolk
  • 1 teaspoon lemon juice
  • 1 teaspoon white truffle oil
  • 1/2 cup olive oil
  • 1/2 cup shredded Parmigiano-Reggiano

How To Make asparagus with truffle aioli and parmesan

  • Step 1
    Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. Trim the asparagus and lay them in a single layer.
  • Step 2
    Drizzle with olive oil and season with salt and pepper. Roast for 10 minutes, then turn and roast another 10 minutes.
  • Step 3
    Meanwhile, whisk the water, egg yolk, and lemon juice in a bowl.
  • Step 4
    Slowly drizzle the olive oil in the bowl, whisking constantly.

    Whisk in the truffle oil. Season with salt and pepper.
