Ingredients

  • 2 pounds asparagus
  • 1/2 cup olive oil
  • 1/4 cup champagne vinegar
  • 1 tablespoon dijon mustard
  • 1 teaspoon salt
  • 2 tablespoons freshly grated parmesan cheese plus more for serving
  • 1/4 cup bacon cooked and crumbled small

How To Make asparagus with parmesan vinaigrette

  • Step 1
    Cut the hard woody parts of the asparagus off. Place a large skillet on stove with about 2 inches of water. Bring to a boil and add some salt. Add the asparagus and reduce heat to medium and cook about 5 minutes.
  • Step 2
    In a baking pan whisk the olive oil, vinegar, mustard & salt together. Stir in the Parmesan cheese. Drain the asparagus and add to the vinaigrette. Stir around in the vinaigrette to completely cover all the asparagus
  • Step 3
    Remove asparagus to a plate. Sprinkle the bacon over top and add more Parmesan cheese and serve.
