Ingredients
- 1 pound jumbo asparagus bottoms trimmed
- 1 tablespoon lemon juice
- 3/4 cup cold butter cut into cubes
- 1/4 cup freshly grated parmigiano reggiano cheese
- 1/2 tablespoon lemon zest
How To Make asparagus with lemon parmesan butter

Step 1Place water in a 12 inch saute pan and add salt. Bring to a boil. Lay the asparagus in the pan in a single layer. Cook 7 minutes.

Step 2Meanwhile make the butter. Add the lemon juice to a saucepan. Bring to a simmer. Whisk in the butter one piece at a time. Do not let it get to hot or the butter will break.

Step 3Slowly whisk in the cheese and lemon zest. Season with salt and pepper. With tongs remove the asparagus to a plate and top with the sauce.
