asparagus with lemon butter

I can't get enough asparagus when it's in season. This dish is really simple to make. I sometimes add about 1/4 tsp. of Dijon mustard to the mixture for a little extra added flavor, though the recipe doesn't call for it.

Ingredients

  • 2 to 2-1/2 pounds asparagus
  • 2 tablespoons bottled or fresh squeezed lemon juice
  • 1 stick butter or margarine
  • - lemon wedges for garnish

How To Make asparagus with lemon butter

  • Step 1
    Wash and trim asparagus. Cook in boiling water just until tender, about 10-12 minutes. (or steam it)
  • Step 2
    Combine lemon juice and 2 tablespoons of butter in a small saucepan. Heat until bubbly.
  • Step 3
    Gradually add the remaining butter, stirring until blended.
  • Step 4
    Drain asparagus. Arrange on a platter.
  • Step 5
    Spoon the lemon butter over the asparagus, as little or as much as you like.
  • Step 6
    Garnish with lemon wedges.
