Asparagus with Lemon Butter

I can't get enough asparagus when it's in season. This dish is really simple to make. I sometimes add about 1/4 tsp. of Dijon mustard to the mixture for a little extra added flavor, though the recipe doesn't call for it.

  • 2 to 2-1/2 lb
  • 2 Tbsp
    bottled or fresh squeezed lemon juice
  • 1 stick
    butter or margarine
  • ·
    lemon wedges for garnish

How to Make Asparagus with Lemon Butter


  1. Wash and trim asparagus. Cook in boiling water just until tender, about 10-12 minutes. (or steam it)
  2. Combine lemon juice and 2 tablespoons of butter in a small saucepan. Heat until bubbly.
  3. Gradually add the remaining butter, stirring until blended.
  4. Drain asparagus. Arrange on a platter.
  5. Spoon the lemon butter over the asparagus, as little or as much as you like.
  6. Garnish with lemon wedges.
