asparagus with lemon butter
I can't get enough asparagus when it's in season. This dish is really simple to make. I sometimes add about 1/4 tsp. of Dijon mustard to the mixture for a little extra added flavor, though the recipe doesn't call for it.

Ingredients
- 2 to 2-1/2 pounds asparagus
- 2 tablespoons bottled or fresh squeezed lemon juice
- 1 stick butter or margarine
- - lemon wedges for garnish
How To Make asparagus with lemon butter

Step 1Wash and trim asparagus. Cook in boiling water just until tender, about 10-12 minutes. (or steam it)

Step 2Combine lemon juice and 2 tablespoons of butter in a small saucepan. Heat until bubbly.

Step 3Gradually add the remaining butter, stirring until blended.

Step 4Drain asparagus. Arrange on a platter.

Step 5Spoon the lemon butter over the asparagus, as little or as much as you like.

Step 6Garnish with lemon wedges.
