Ingredients
- 1 tablespoon cold water
- 2 teaspoons soy sauce
- 1 teaspoon corn starch
- 1/4 teaspoon salt
- 1 pound fresh asparagus spears
- 1 tablespoon vegetable oil
- 4 green onions, sliced diaganally into 1-inch pieces
- 1 1/2 cups sliced fresh mushrooms
- 2 small tomatoes, cut into thin wedges
How To Make asparagus tomato stir-fry

Step 1Combine the first 4 ingredients in a small bowl; stirring until blended. Set aside.

Step 2Snap off the tough ends of the asparagus. Remove scales from the stalks of the asparagus if desired. Cut the asparagus diagonally into 1 1/2 inch pieces. Set aside.

Step 3Pour oil around the top of a large preheated wok or high sided skillet. Heat the oil at medium-high heat (325º) for 2 minutes. Add the asparagus and green onions; stir fry for 3 to 4 minutes. Add mushrooms, stir fry 1 minute. Add the reserved corn starch mixture to the wok or skillet; cook until thickened and bubbly. Add the tomato, and cook just until heated. Serve immediately.
