Ingredients

  • 1 lb
    asparagus
  • 3 large
    egg yolks
  • 2 Tbsp
    lemon juice
  • 1/2 tsp
    salt
  • 1
    dash pepper
  • 1/2 c
    melted butter

How to Make Asparagus Hollandaise

Step-by-Step

  1. Snap asparagus stalks.
    Cook,covered,in salted water 10-15 minutes.
    DO NOT OVER COOK!!
  2. Meanwhile mix egg yolks,lemon juice,salt and pepper in blender for 5 seconds.
    Add in butter while blending again for 5 seconds more.
    Heat in a double boiler over low heat.
    Place asparagus on serving dish and pour sauce over.
