Asparagus Candy

2 bunchasparagus

4 Tbspolive oil

1/2 cparmigiano-reggiano, grated

4 Tbsplemon juice, fresh

·salt and pepper to taste
How to Make Asparagus Candy
- Pre heat oven to 450 degrees.
- Wash asparagus and snap hard, woody ends off. Pour olive oil, salt and pepper over asparagus. Make sure they all get a good rub down!
- Put the asparagus on a large cookie sheet. Make sure they are spread out flat (you may have to do 2 batches). Roast for 10 minutes.
- After 10 minutes, take the asparagus out and sprinkle with the cheese and lemon juice. Put back in the oven for 5 to 8 minutes. I take them out when the cheese is nice and crispy!
