This is the only way I will eat asparagus, and I said, "this is like candy!!" A really quick and yummy way to make asparagus.

Ingredients

  • 2 bunch
    asparagus
  • 4 Tbsp
    olive oil
  • 1/2 c
    parmigiano-reggiano, grated
  • 4 Tbsp
    lemon juice, fresh
  • ·
    salt and pepper to taste

How to Make Asparagus Candy

Step-by-Step

  1. Pre heat oven to 450 degrees.
  2. Wash asparagus and snap hard, woody ends off. Pour olive oil, salt and pepper over asparagus. Make sure they all get a good rub down!
  3. Put the asparagus on a large cookie sheet. Make sure they are spread out flat (you may have to do 2 batches). Roast for 10 minutes.
  4. After 10 minutes, take the asparagus out and sprinkle with the cheese and lemon juice. Put back in the oven for 5 to 8 minutes. I take them out when the cheese is nice and crispy!
