I have been collecting recipes and even creating them for years trying to use up the abundance of zucchini we have from our garden in the summertime. Here's another one that we like. A little bit crunchy and a little bit spicy!

Ingredients For asian-inspired zucchini

2 Tbspolive oil or vegetable oil

3 mdzucchini or yellow squash

1 mdsweet onion, chopped

1 Tbspsoy sauce
-
2 Tbspteriyaki sauce
-
1/2 - 1 tspsambal oelek
-
fresh grated black pepper
-
1 tspsesame seeds for garnish
How To Make asian-inspired zucchini

1In a small bowl, mix together soy sauce, teriyaki sauce, sambal and black pepper. Set aside.

2Cut zucchinis in thirds, then cut each third into 6 wedges.

3In a large non-stick skillet, heat oil over medium-high. Add onion and saute for about 1 minute, then add zucchini and saute for 2 minutes more.

4Add the teriyaki mixture and continue to cook for 2-4 minutes until zucchini are cooked to your liking.

5Transfer to serving dish, sprinkle with sesame seeds and serve.
