asian-inspired zucchini
I have been collecting recipes and even creating them for years trying to use up the abundance of zucchini we have from our garden in the summertime. Here's another one that we like. A little bit crunchy and a little bit spicy!

Ingredients
- 2 tablespoons olive oil or vegetable oil
- 3 medium zucchini or yellow squash
- 1 medium sweet onion, chopped
- 1 tablespoon soy sauce
- 2 tablespoons teriyaki sauce
- 1/2 - 1 teaspoons sambal oelek
- fresh grated black pepper
- 1 teaspoon sesame seeds for garnish
How To Make asian-inspired zucchini

Step 1In a small bowl, mix together soy sauce, teriyaki sauce, sambal and black pepper. Set aside.

Step 2Cut zucchinis in thirds, then cut each third into 6 wedges.

Step 3In a large non-stick skillet, heat oil over medium-high. Add onion and saute for about 1 minute, then add zucchini and saute for 2 minutes more.

Step 4Add the teriyaki mixture and continue to cook for 2-4 minutes until zucchini are cooked to your liking.

Step 5Transfer to serving dish, sprinkle with sesame seeds and serve.
