I have been collecting recipes and even creating them for years trying to use up the abundance of zucchini we have from our garden in the summertime. Here's another one that we like. A little bit crunchy and a little bit spicy!

Ingredients For asian-inspired zucchini

  • 2 Tbsp
    olive oil or vegetable oil
  • 3 md
    zucchini or yellow squash
  • 1 md
    sweet onion, chopped
  • 1 Tbsp
    soy sauce
  • 2 Tbsp
    teriyaki sauce
  • 1/2 - 1 tsp
    sambal oelek
  • fresh grated black pepper
  • 1 tsp
    sesame seeds for garnish

How To Make asian-inspired zucchini

    In a small bowl, mix together soy sauce, teriyaki sauce, sambal and black pepper. Set aside.

    Cut zucchinis in thirds, then cut each third into 6 wedges.

    In a large non-stick skillet, heat oil over medium-high. Add onion and saute for about 1 minute, then add zucchini and saute for 2 minutes more.

    Add the teriyaki mixture and continue to cook for 2-4 minutes until zucchini are cooked to your liking.

    Transfer to serving dish, sprinkle with sesame seeds and serve.
