Ingredients

  • 12 - medium artichokes
  • 2 - lemons, juice and rinds
  • 1/2 cup olive oil
  • - salt
  • - freshly ground black pepper

How To Make artichokes truffle style

  • Step 1
    Clean artichokes.
  • Step 2
    Cut in half lengthwise and keep in lemon water.
  • Step 3
    Heat 1/4 cup of oil in a large skillet.
  • Step 4
    Drain 6 artichokes very well.
  • Step 5
    Cut into very thin slivers directly into the hot oil and fry, stirring frequently, for 10 minutes.
  • Step 6
    Add salt and pepper to taste and continue to fry until slices are golden brown and crisp.
  • Step 7
    Transfer to a hot serving dish and keep warm.
  • Step 8
    Repeat with the remaining oil and artichokes.
