One of my mom's handwritten recipes. She made these for holidays and even us kids ate them.

Ingredients

  • 1 pound carrots, sliced
  • 1/4 cup apricot preserves
  • 1 tablespoon butter
  • 1 teaspoon lemon juice
  • 1/8 teaspoon nutmeg

How To Make apricot carrots

  • Step 1
    Put carrots in a saucepan with enough water to cover. Next bring to a boil. Cover and cook for 8 minutes or until crisp and yet still tender. Drain. Add remaining ingredients and continue to cook while stirring over medium heat for 3 minutes or until preserves are melted and carrots are coated
  • Step 2
    Garnish with a bit of grated lemon or orange rind.
