Amelia's Sweet and Sour Vegetables

I got this recipe from a friend and it is a good one. The crispy vegetables are accented by the simple (but delicious)sauce.

This salad needs to be refrigerated over-night.

3 c
chopped cauliflower (use head only, not stems)
3 c
chopped broccoli florets
2 medium
carrots, chopped thin
1 medium
zucchini, quartered and sliced thin
1 medium
sweet onion, halved and sliced thin
3/4 c
apple cider vinegar
1/4 c
1/2 tsp
salt (optional)
2 Tbsp
olive oil
3-4 Tbsp
sunflower seed kernals, optional


1In a large bowl stir together vegetables. Set aside

In a saucepan, over medium heat combine vinegar, sugar, and salt. Bring to a boil. Remove from heat and stir in oil.

Pour over vegetables and toss to coat evenly.
2Cover bowl and refrigerate overnight. When ready to serve sprinkle with sunflower seeds and serve immediately.
