I got this recipe from a friend and it is a good one. The crispy vegetables are accented by the simple (but delicious)sauce.

This salad needs to be refrigerated over-night.

3 c
chopped cauliflower (use head only, not stems)
3 c
chopped broccoli florets
2 medium
carrots, chopped thin
1 medium
zucchini, quartered and sliced thin
1 medium
sweet onion, halved and sliced thin
3/4 c
apple cider vinegar
1/4 c
1/2 tsp
salt (optional)
2 Tbsp
olive oil
3-4 Tbsp
sunflower seed kernals, optional

How to Make Amelia's Sweet and Sour Vegetables


  • 1In a large bowl stir together vegetables. Set aside

    In a saucepan, over medium heat combine vinegar, sugar, and salt. Bring to a boil. Remove from heat and stir in oil.

    Pour over vegetables and toss to coat evenly.
  • 2Cover bowl and refrigerate overnight. When ready to serve sprinkle with sunflower seeds and serve immediately.
