Almost Pureed Minted Peas
fresh, shelled english peas
fresh mint, cut into chiffonade
How to Make Almost Pureed Minted Peas
1Bring water & salt to a boil in a small saucepan.
2Add butter & peas. Cover & cook about 5 minutes. If peas start getting too soft, shut the heat immediately.
3Using a stick blender, puree about 3/4 of the peas. Stir in the mint & check for seasoning. Can be served hot or at room temperature.
