- fresh, shelled english peas
- 4 Tbsp
- unsalted butter
- 1/2 c
- 2 Tbsp
- fresh mint, cut into chiffonade
- 2 pinch
- sea salt
How to Make Almost Pureed Minted Peas
- 1Bring water & salt to a boil in a small saucepan.
- 2Add butter & peas. Cover & cook about 5 minutes. If peas start getting too soft, shut the heat immediately.
- 3Using a stick blender, puree about 3/4 of the peas. Stir in the mint & check for seasoning. Can be served hot or at room temperature.
